The smaller plates travel with equal range. Shrimp Pickle with Masala Brioche reinterprets a familiar coastal preserve through a contemporary format. Chicken Wings Vepudu draws from Andhra flavours, while Steamed Kalimpong Momos and Jeedipappu Pakoda bring influences from the hills and the south. Andhra's Gongura Mamsaam sits alongside Kundapur Ghee Roast from coastal Karnataka, Kerala's Meen Pollichattu, Kolhapuri Mutton Sukka from Maharashtra and Butter Chicken from Old Delhi.Each symbolic landing becomes the starting point for a new discovery, picking up regional ingredients, familiar flavours and memories along the way. One flight lands in a grandmother's kitchen, inspiring a cocktail with gongura, another settles on a mango tree, while others arrive at destinations that shape each drink through the ingredients they encounter.
